Steve's Salsa

• 2-15oz canned diced tomatoes

• 1 cup chopped onions (white is good red is better)

• 1-1/2 Tbsp minced garlic

• 4 Serrano peppers, minced (or more if you like it really spicy)

• 1 Tsp dried cilantro leaves (fresh is better)

• 2 Tbsp lime juice

• 2 Tbsp honey

• 1/2 Tsp Kosher salt

• 1 Tsp ancho chile powder

Combine all the ingredients in blender and pulse to desired texture. Let salsa sit overnight in refrigerator for the flavors to blend. Serve with you favorite tortilla chips or fry your own using corn tortillas and some sea salt.....

Do you like using other peppers like Chile De Arbol???? They have a very distinctive flavor and make a very "different tasting" salsa. I use them as a powder but you can use them dried and reconstitute them with hot water if you wish. I will post the recipe if you want.....

I've played with some dried peppers in the past, but mostly in chilis, the only salsa I've ever made was tomatillo-based. I'm more of a guac person so I try and make a lot of different homemade guacs throughout the year,

Romas IMHO are best because they have very little liquid in them.

You can actually buy a ripe Roma, save some seed, dry and plant them. They tend to grow true. Right now is a good time to start them indoors in pots under lights.

...tortilla chips or fry your own using
corn tortillas and some sea salt...

I slice 8" plain yellow corn tortillas into quarters
and BAKE them on low heat on a
stainless steel cookie tray - no oil needed.
Only takes 20 minutes (per side) or less if oven
is preheated. Just tap 'em until they seem crisp.
But you are probably going to want to turn 'em once.
Mmmmm....

EDIT:

We are talking about a 200 - 300 degree oven here... 300 tops...

Garden Salsa

I've got lots of different types of peppers and tomatoes growing including something called a "Garden Salsa Hot Pepper". It's rated "medium hot" at 1,000 to 5,000 Scoville heat units.

With all of the stuff in the garden, I don't really need anything canned at the moment.

I just bought two boxes of tomatoes for 8 bucks at the farmers market. About 30 pounds of tomatoes.

We grew four tomato plants this year, but the farmers market was cheaper than growing them. lol

We skinned them, quartered them and froze them all. We will make only salsa out of them over the winter.

My dad froze tomatoes before. They turned to mush.

They were whole tomatoes though.

I like canning them.

I have about 30 or so tomato plants.

It's easy.

Get a pressure cooker, canning jars, rings for them.

You just scald the tomatoes in boiling water for a minute or so.

Then you take the skin off, it comes off quite easily. Hot on the hands though.

Stuff as many as you can in the jar. Put a spoon or something in the jar to move them around s move them around so you can pour out as much liquid as possible.

Put a teaspoon of salt in them.

Put the rings and seals on the jars.

Fill the pressure cooker up with them.

Then add water to the pan.

Set the pressure to 5 or 10 lbs. Or you don't even need to set it they will still se still seal.

Cook them until they start rattling for about 5 or 10 min.

Then take them out and let them cool off.

Take the rings off and make sure they sealed by pressing on the seal.

Done.
